Database objective
Main objective Purpose of the AUPALESENS programme was to test the efficacy of "sensory" strategies for preventing and fighting malnutrition among seniors. Specifically, this programme allows for:
• the measurement of the impact of sensory, psychological and sociological factors on the dietary behaviour and nutritional status of seniors. This work is based on a multidisciplinary survey conducted in 559 French people over 65 years of age who present different degrees of dependence (independent individuals living at home, individuals receiving aid at home, individuals living in an institution);
• identification of tactics for improving the appetence and pleasure associated with meals for dependent seniors. For this work, we have developed and tested tools and strategies for improving 1. the sensory quality of foods offered to seniors (content of the dish) and 2. the context of the meal (reappropriation of the meal);
• evaluation of the impact of sensory tactics on dietary intake over the course of a meal.
